Bagel Lunch Plate
Ingredients
• 1 sourdough bagel, toasted
• 2 tbsp / 30 g cream cheese or hummus
• 4–5 mini pickles
• 2–3 slices / 30 g cheese, any type
• 1/2 cup / 15 g microgreens
• 1 cup / 30 g fresh spinach
• 1 hard-boiled egg
• 1–2 tsp / 5–10 ml balsamic glaze
• Salt and black pepper, to taste
Instructions
1. Toast the bagel until golden brown. Spread with cream cheese or hummus.
2. Hard-boil the egg, peel, and slice.
3. Cut up and assemble all other ingredients: mini pickles, cheese, microgreens, spinach, and sliced hard-boiled egg.
4. Plate everything on the bagel or alongside as preferred.
5. Drizzle with balsamic glaze and season with salt and black pepper.
Tip
• Add fig spread for a sweet contrast if desired.
• Mix and match cheeses or spreads for variety.
