Banana Protein Pancakes

Ingredients

• 1 ripe banana
• 2 eggs
• 1 scoop vanilla protein powder
• 2 tbsp almond flour
• 1/2 tsp baking soda
• 1/2 tsp vanilla extract
• 1–2 tbsp peanut butter (for batter or topping)

Toppings

• Banana slices
• Fresh blackberries
• Yogurt
• Maple syrup
• Chocolate sprinkles

Instructions

1. Mash the banana in a bowl until smooth.
2. Add eggs, vanilla protein powder, almond flour, baking soda and vanilla extract. Mix until combined.
3. Heat a non-stick pan over medium-low heat and lightly grease if needed.
4. Pour small amounts of batter into the pan to form pancakes.
5. Cook for 2–3 minutes per side, until golden and set.
6. Stack pancakes and top with peanut butter, banana slices, blackberries, yogurt, maple syrup and chocolate sprinkles.
