Protein Burrito

Ingredients

1 cup (240 ml) liquid egg whites
1 cup (30 g) fresh spinach, chopped
1/3 cup (50 g) feta, crumbled
2 small tortillas (18–20 cm)
1/16 cup (15 ml) olive oil
Salt & pepper

Instructions

Heat oil in a pan over medium heat.
Add spinach and cook until wilted (1–2 min).
Pour in egg whites, season, and cook gently until just set.
Remove from heat and fold in feta.
Divide filling between tortillas and roll tightly.
Optional: toast seam-side down until golden.
