Sweet Potato Brownies
Ingredients
• 2 large sweet potatoes
• 2 eggs
• 1/2 cup (120 g) yogurt
• 1/3 cup (80 ml) honey (adjust to taste)
• 1 tsp vanilla extract
• 1/2 cup (40–50 g) chocolate protein powder
• 1/4 cup (20–25 g) unsweetened cocoa powder
• 1/2 tsp baking soda
• 1/3 cup (60 g) chocolate chips
Instructions
1. Preheat oven to 180°C (350°F) and line a baking dish with parchment paper.
2. Cook sweet potatoes until soft (boil or bake), then peel and mash until smooth.
3. In a bowl, mix mashed sweet potatoes, eggs, yogurt, honey and vanilla extract.
4. Add cocoa powder, protein powder and baking soda. Mix until fully combined and smooth.
5. Fold in chocolate chips.
6. Pour batter into prepared baking dish and spread evenly.
7. Bake for 25–35 minutes, or until set in the center.
8. Let cool completely before slicing into brownies.
